Paximadia ~ Greek Biscottis Recipe
A nice cookie for Christmas or just to enjoy with your morning coffee. Packs well and can be frozen
Ingredients
- 2 Cubes butter
- 1 1/2 Cup sugar
- 3 Slightly beaten eggs
- 1 Jigger Brandy or Metaxi
- 1 Tsp Vanilla
- 1 Tbs. Baking powder
- 1 Tsp. Salt
- 4 Cups flour
- Sesame Seeds
Directions
- Cream butter and sugar together, adding eggs one at a time
- Add Brandy, vanilla, baking powder and salt
- Add flour, you may need to add a bit more to make it easier to roll out.
- Roll out dough and cut into 3 equal sections, roll each section into a long roll, the size of your cookie sheet 11 X 17 Roll the three sections into a long snake
- Roll this into sesame seeds
- Score each roll into 19-20 sections, you will cut on this line after they are baked
- Bake 350 for 30 minutes
- Pull out of oven and cut on the scored line, lay out on cookie sheet cut side down and bake for app 15 minutes or until golden
