Ingredients

  • 3/4 c. sweet cream butter, softened
  • 1 c. sugar
  • 4 x Large eggs
  • 1 c. peach jam
  • 1 tsp lemon extract
  • 2 1/2 c. unsifted all-purpose flour
  • 1 tsp soda
  • 1 tsp cinnamon
  • 1/2 tsp baking pwdr
  • 1/2 tsp allspice
  • 1 c. buttermilk
  • 1 c. currants, dredged in flour
  •     Preheat oven to 350 degrees.
  •     Grease three 8" round cake pans.

Directions

  1. In large mixer bowl cream butter and sugar till light and fluffy.
  2. Add in Large eggs, one at a time, beating well after each addition.
  3. ` Blend in jam and lemon extract.
  4. Mix together flour, soda, cinnamon, baking pwdr and allspice. Add in dry ingredients alternately with buttermilk. Mix in currants.
  5. Turn into pans.
  6. Bake at 350 degrees for 25 to 30 min till toothpick inserted in center comes out clean.
  7. Cold 5 min; remove from pan. Cold completely.
  8. Spread Cream Cheese Butter Icing between layers and on top of cake. (See recipe.)
