Ingredients

  • 3 env. Knox unflavored gelatin
  • 1/4 c. sugar
  • 2 c. orange juice, heated to boiling
  • 2 1/2 c. plain yogurt
  • 1 c. mandarin oranges, liquid removed (reserve syrup)
  • Use any combination to equal 2 c.: sliced bananas, sliced strawberries, minced apples, minced walnuts, raisins, blueberries, dry fruits

Directions

  1. In a large bowl, mix unflavored gelatin with sugar. Add in hot juice and stir till gelatin is dissolved. With wire whip or possibly rotary beater, blend in yogurt and reserved syrup. Refrigerate, stirring occasionally, till mix resembles consistency of unbeaten egg whites. Stir in oranges and fruit and nuts. Pour into 13 x 9 inch pan. Refrigerate till hard. To serve, cut into squares.
