  • 2 c. self-rising cornmeal mix (buttermilk kind)
  • 1/3 c. flour
  • 1 T sugar
  • 1 med. onion, minced fine
  • 1 egg
  • 1/4 to 1/2 c. lowfat milk, add in a little at a time

Directions

  1. Mix cornmeal, flour and sugar; add in onion and egg. Gradually add in lowfat milk till batter forms a sticky ball on a tsp. If too dry, add in a tbsp of water at a time till moist sufficient. Heat deep fat till 325 degrees. Drop by tsp into hot fat, cooking till golden. Drain on paper towels. Serves 8-10 people.
