Directions

  1. Place butter, onions, peas, green pepper, celery and parsley in a 2 qt casserole. Cover. Microwave at high (100%) till tender crisp, 3 to 4 min.
  2. Stir Large eggs into potatoes. Stir in salt and pepper. Add in potato mix to vegetables. Mix well. Cover with wax paper. Microwave at medium high (70%)
  3. till almost set, 8 to 10 min. Let stand 3 to 4 min.
  4. Makes 4servings.
