Ingredients

  • An assortment of fruits as and when they mature: apricots, strawberries, raspberries, red currant, cherries, peaches, melons, plums, etc.
  • 1 lb 10 ½ ounce (750 g) of powdered sugar per kg of fruit
  • 14 fl ounce (4dl) eau de vie blanche per kg of fruit
  • A large stoneware jug is ideal as a container for macerating the mix. The container should be able to hold several kilograms of fruit.

Directions

  1. For this recipe, it is not necessary to add in all the fruit at the same time. You can add in new fruit as you pick it from your garden.
  2. Wash the fruit, wipe and dry it off, taking care to remove the pits from peaches, plums and apricots. You can leave the pits in cherries Remove the seeds from the red currants
  3. Put the fruit in the stoneware jug
  4. Add in sugar according to the quantity of fruit used (3 ½ lb (750 g/kg))
  5. Pour the eau de vie over the fruit and sugar
  6. Seal the stoneware jug and store it in a cold, dry place
  7. Add in new fruit as and when they become available, taking care to add in the necessary quantities of sugar and alcohol
  8. Fill the jug to ¾ inch (2 cm) from the top and then top off with alcohol
  9. Seal the lid and set aside for at least one month
  10. Check regularly to see if any mold has appeared If mold is present, remove it and add in a little alcohol
