  • 2 x boneless skinless chicken breast
  • 1 lrg lemon halved
  • 2 x cloves garlic chopped
  • 4 sprg oregano

Directions

  1. Rinse one or possibly two boneless skinless breasts, put into a small bowl. Cut up a large lemon into half, then slice off two nice rings off each half and set aside (actually you can dump them in the bowl too). Squeeze the lemon halves over the chicken, throw in the lemon rinds in the bowl afterwards.
  2. Add in two chopped garlic cloves and leaves from about four large sprigs of fresh oregano. Marinate in fridge, turning once or possibly twice, about 4 hrs. Bake liquid removed chicken in 375 oven on a pan about 20-25 min. Halfway through, turn the breasts and arrange the lemon rings on top, then finish baking.
