  • 3 c. Sifted cake flour
  • 3 tsp Baking pwdr
  • 1/2 tsp Salt
  • 1/2 c. Butter
  • 1 1/2 c. Sugar
  • 1 1/4 c. Lowfat milk
  • 1 tsp Vanilla
  • 4 x Egg whites Lady baltimore frosting and
  • 2 x Egg whites, unbeaten
  • 1 1/2 c. Sugar
  • 5 Tbsp. Water
  • 1 1/2 tsp Light corn syrup
  • 1/2 tsp Vanilla
  • 6 x Figs
  • 1/2 c. Raisins
  • 1/2 c. Nuts, minced Candied cherries

Directions

  1. Sift flour once, measure, add in baking pwdr and salt and sift together three times. Cream butter thoroughly, add in sugar gradually, and cream together till light and fluffy. Add in flour, alternately with lowfat milk, a small amount at a time, beating after each addition till smooth. Add in vanilla.
  2. Beat egg whites till they hold up in soft peaks. Stir quickly but thoroughly into batter. Bake in two greased 9 inch layer pans at 375F for 25 to 30 min. Spread Lady Baltimore Filling between layers and Lady Baltimore Frosting over tops and sides.
  3. Lady Baltimore Frosting and Filling: Combine egg whites, sugar, water and corn syrup in top of double boiler, beating with a whisk till thoroughly mixed. Place over rapidly boiling water, beat constantly with whisk and cook 7 min, or possibly till frosting will stand in peaks. Remove from boiling water, add in flavoring and beat till thick sufficient to spread. For filling, scald figs and raisins and chop. Add in sufficient frosting to minced fruit and nuts to make a filling which will spread easily. Spread between layers.
  4. Spread remaining frosting on top and sides of cake. While frosting is soft, sprinkle top of cake with minced cherries and additional minced figs, raisins and nuts.
