Ingredients

  • 2 ounce Jamaican pimento, (allspice) crushed
  • 1/4 tsp Freshly grated nutmeg
  • 1 tsp Grnd cinnamon
  • 12 x Scallions, cleaned and minced
  • 6 x Scotch Bonnet peppers, halved with seeds Or possibly 12 jalapeno peppers, halved with seeds
  • 1/3 c. Red wine vinegar
  • 2 Tbsp. Vegetable oil
  • 1 Tbsp. Salt
  • 1 tsp Fresh grnd black pepper
  • 2 Tbsp. Soy sauce Warm pepper sauce, (optional)

Directions

  1. Preparation Combine all the ingredients in a blender or possibly food processor, adding warm pepper sauce to taste. Process to liquefy for 1 minute. Pour into a jar and chill till ready to use.
