Fried Risotto Balls by debbieMost of the work can be done a day in advance. For over-the-top cheesiness, serve with a cheese sauce for dipping. For additional flavor, start with a flavored risotto such as mushroom. This is an excellent hors d’oeuvre to serve half-way through the party to bring new interest to the food. |

Annatto Rice by Bob VincentAnnatto oil gives this rice dish a nice yellow color. The oil doesn't add much taste but makes for a nice presentation. It can be used instead of butter or oil when cooking long grain rice. I used parboiled. If you use a different type of rice vary the cooking time accordingly. |

Arroz Con Leche Brulee by Colleen McconnellI don’t think I realized how delicious arroz con leche was until I was in Spain last month. We had SO MUCH of it there, and I didn’t come across a single version that I didn’t like. My favorite was definitely at a restaurant called El Ñeru, where they actually bruleed the top. This is my at home recreation of it. |
