Holiday Pumpkin Cake Recipe

Ingredients
- 2 c. flour
- 1 1/2 c. veg. oil
- 2 c. sugar
- 1 tsp baking pwdr
- 2 tsp baking soda
- 1 tsp salt
- 1 tsp all spice
- 2 tsp cinnamon
- 2 c. pumpkin
- 4 x Large eggs
- 2 tsp vanilla
- 1 c. minced pecans
- 1 c. raisins
- 1 sm can crushed pineapple, liquid removed
Directions
- Mix oil and sugar. Mix flour, baking pwdr, soda, salt, all-spice and cinnamon. Add in dry ingredients with 2 c. pumpkin. Add in Large eggs, one at a time, beating well.
- Add in vanilla, pecans, raisins and pineapple. Mix all ingredients, pour into a large tube cake pan or possibly 13 x 10 x 2 inch pan. Bake at 325 about one hour.
- Icing:Mix one stick margarine and one (8-oz) cream cheese. Add in one box powdered sugar and 1/4 tsp. salt, mix till well blended. Add in 1/2 c. minced pecans and one tsp. vanilla. Spread on cooled cake.
