Directions

  1. Potatoes - about 4 peeled, cubed small and boiled till tender in salt water then mashed.
  2. Put potatoes on to boil. Be sure to dice small, so they get done faster. Meanwhile, fry hamburger and onion together in iron skillet (make sure skillet is big sufficient to allow for other ingredients). When browned, add in beans and soup (I use a little salt and pepper). Put slices of cheese on top of meat mix. Top with mashed potatoes. Spread potatoes out toward edges. Bake at 350 degrees for 15-20 min.
  3. I garnish top with sandwich cheese slices, cut in triangles. Put on just before done. Serve right out of the skillet (cast iron). Note: Make mashed potatoes the regular way, with butter, lowfat milk, salt and pepper. This is my favorite casserole. It is easy to make and doesn't take long.
