  • 2 cans cream of mushroom soup
  • 1 pt. lowfat sour cream
  • 2 c. cream style cottage cheese
  • 2 Large eggs, slightly beaten
  • 1/2 c. minced onions
  • 1 (10 ounce.) pkg. frzn minced spinach, cooked & liquid removed
  • 1 teaspoon dry mustard
  • 1/2 teaspoon salt
  • 1 1/2 pound cooked ham, sliced

Directions

  1. Combine soup and 1/2 c. lowfat sour cream in a bowl; set aside. Combine remaining lowfat sour cream with cottage cheese, Large eggs, onions, spinach, mustard and salt; mix well. Spoon 2 tablespoonsful of cottage cheese filling onto each ham slice. Roll up ham, folding in the edges. Place in shallow baking dish. Cover with lowfat sour cream sauce. Bake at 350 degrees for 20-25 min. Yield 8 servings.
