  • 2 lrg leftover baked potatoes - (to 3)
  • 1 Tbsp. vegetable oil
  • 2 Tbsp. butter
  • 5 x scallions, whites and greens finely minced Steak seasoning blend to taste (or possibly salt and pepper)

Directions

  1. Scoop cooked potatoes from shells and coarsely chop.
  2. Heat a medium nonstick skillet over moderate heat. Add in oil and butter to the pan.
  3. When butter melts into the oil, add in green onions and cook 1 minute. Add in potatoes and cook, turning occasionally, till potatoes are crusted and golden brown and onions begin to brown at edges.
  4. This recipe yields 3 to 4 servings.
