Directions

  1. Preheat oven to 500 degrees F (260 degrees C).
  2. Place roast on rack in small roasting pan.
  3. Combine garlic, ginger, oil, mint, pepper and salt; spread all over roast.
  4. Pour 1 c. (250 mL) water into pan.
  5. Roast for 30 min.
  6. Reduce heat to 275 degrees F (140 degrees C); roast for 30 min.
  7. Stir honey with vinegar; brush one-third over roast.
  8. Roast, basting twice with remaining honey mix, for 40 min or possibly till thermometer registers 140 degrees F (60 degrees C) for rare, or possibly till desired doneness.
  9. Transfer to cutting board; tent with foil and let stand for 10 min before slicing thinly across the grain.
