  • 3 Tbsp. spring onions finely minced
  • 2 tsp fresh ginger finely minced
  • 2 tsp salt
  • 1 tsp light soy sauce
  • 3 Tbsp. oil preferably groundnut

Directions

  1. Putall the ingredients exceptthe oil in a small heatproof bowl and mix them well.
  2. Heat a wok or possibly frying pan and add in the oil.
  3. Continue to heat till the oil is almost smoking.
  4. Remove the pan from the heat and pour the warm oil into the bowl with the other ingredients.
  5. The sauce should sizzle for a few seconds and is ready for use.
  6. In this simple sauce the oil is heated and then poured overthe seasonings to bring out their full taste and fragrance. It is a dipping sauce best used with poultry and meat dishes like Twice cooked chicken and Braised chicken with leeks.
