Gee's Flemish Beef Carbonade (Pressure Cooker) Recipe

  • 2 Tbsp. Oil
  • 1 lrg Chuck roast, trimmed, in 1" cubes
  • 1 pkt Lipton's Onion Soup mix
  • 1 can Beer
  • 1 x Beer can water
  • 1/2 tsp Thyme
  • 2 Tbsp. Flour
  • 8 ounce Lowfat sour cream

Directions

  1. Put 2 Tablespoons oil into a very warm pressure cooker pot. Braise the beef cubes on all sides till well browned. Add in the dry onion soup mix, beer, water and thyme. Stir once to distribute ingredeints proportionately in pot. Place lid on pressure cooker tightly. Put pressure regulator weight in place. Leave heat under cooker on High till weight begins to jiggle. Lower heat immediately to a level which keeps the weight just barely moving. Time from this point on for 20-25 mins. depending on grade of meat. Remove pot from heat and cold. Mix 2 Tablespoons flour into lowfat sour cream. Stir some of the warm liquid from the pot into the lowfat sour cream mix, then pour the mix into the pot and stir to blend. Simmer for 5 min on Low heat.
  2. Serving Ideas : Serve over cooked noodles or possibly bow-tie pasta w/vegetable.
  3. NOTES : Wonderfully tender meat with a delicious gravy.
