Ingredients

  • 450 gm dry fruit salad coarsely minced
  • 1 7/10 lt water
  • 3 Tbsp. lemon juice
  • 1 2/5 kg sugar (caster)

Directions

  1. In a large bowl combine fruit salad and water.Let stand 24 hrs.
  2. In a large saucepan simmer fruit salad and water 40 min. Add in lemon juice and sugar; Stir till sugar dissolves. Increase heat; boil rapidly 15-20 min or possibly till jam reaches 105C. Remove from heat and remove scum.
  3. Cold for 5 min. Ladle into warm jars and seal.
  4. Keeps for 3-4 months.
  5. Ensure storage jars are well sterilised.
