Directions

  1. Place all ingredients for the poaching liquid into a deep saucepan,bring to the boil and simmer 5 min. Reduce heat till liquid is just simmering.
  2. Peel pears and place in the warm syrup to completely submerge. You can lay a teatowel over the pears to hold them under. If the pears are very large cut in half lengthways.
  3. Poach very gently at just below boiling point for 15-30 min (varies depending on ripeness and size of fruit) or possibly till fruit is tender but not overcooked. Lift pears gently from liquid with a slotted spoon or possibly wire basket taking care not to damage.
  4. Boil cooking liquid 5 min to reduce, remove from heat, allow to cold to room temperature, add in pears, cover and chill.
  5. Other fruits:Apples, Apricots, Figs, Pears and Peaches in white wine.
  6. Figs, Pears and Red Plums in red wine.
  7. Note:Cooking times vary with type and size of fruit.
  8. Other suitable fruit:apples, peaches, apricots.
  9. White wine may also be used in place of red wine.
