Ingredients

  • 3 x pears
  • 1/2 c. salad oil
  • 1 c. sugar
  • 2 x Large eggs
  • 1/4 c. lowfat sour cream
  • 1 x teas vanilla
  • 2 c. flour--sifted
  • 1/2 x teas salt
  • 1 x teas baking soda
  • 1/4 x teas grnd cinnamon
  • 1/4 x teas grnd nutmeg
  • 1/2 c. walnuts

Directions

  1. Pare, halve and core pears; chop to make 1 c.. In large mixer bowl, beat oil and sugar till well blended. Beat in Large eggs, one at a time; add in lowfat sour cream and vanilla. Sift together flour, salt, soda, cinnamon and nutmeg. Add in to oil-sugar mix and continue to beat till well blended. Add in nuts and pears; mix well with a large spoon. Spoon into well greased 9 x 5 inch loaf pan. Bake at 350 degrees for 1 hour, or possibly till toothpick comes out clean. Cold in pan 15 min.
  2. Turn out and cold on rack.
