Ingredients

  • Fresh fish fillet (orange roughy, or possibly halibut, or possibly white fish, or possibly tubot, etc.)
  • Fresh salsa (refrigerator section of market)
  • Or possibly USE HOMEMADE SALSA
  • 3 tomatoes, minced
  • 1/2 c. red onion, minced
  • 1/4 c. cilantro
  • 1/4 c. radish (red)
  • 1 yellow pepper
  • 1 sm. jalapeno

Directions

  1. Place 1 fillet of fish on an 11 x 14 inch piece of aluminum foil. Spoon salsa over top. Make pouch by folding three sides over (crimp sides and top). Place in covered electric BBQ - 10 min (don't overcook). Thicker fish may take longer.
  2. Chop and stir together. Add in 7-Up. Delicious.
