Ingredients

  • 1 x Onions, diced, (up to 2)
  • 2 lrg Jars or possibly cans V-8 or possibly tomato juice, (I use the low salt kind)
  • 3 x Cloves garlic, diced, (up to 4)
  • 1 lrg Can tomatoes, cut, (I like
  • 1 can Kidney beans, (or possibly other beans), with juice (Eden's has the lowest sodium content I've seen)
  • 2 x Peeled potatoes, chunked, (up to 3)
  • 2 x Carrots, minced, (up to 3)
  • 1/2 x Juice of lemon Several shakes of no-salt seasoning, (TJ's has a great one called "21")

Directions

  1. (A real comfort, rainy day weather food)
  2. Dump all in a crock pot and cook for 8-9 hrs:
  3. Add in any other vegetables you would like or possibly have on hand, then...add in shredded cabbage (as much as will fit) about an hour before cooking ends.
  4. The cabbage cooks quickly.
  5. One recipe called for brown sugar but doesn't need.
  6. Enjoy with hot bread.
