  1. Peel egg plant, cut up and boil 10 min. After boiling begins, mash egg plant. Brown the grnd beef with the onion and bell pepper. Mix with eggplant. Put in casserole dish, crumbling potato chips on top and bread crumbs (that have been soaked in melted butter). Bake for 30 min.
