Funghi trifolati ("Truffled" mushrooms)

Funghi trifolati ("Truffled" mushrooms) by Frank Fariello

This is one of the easiest and most versatile vegetable dishes in the Italian repertoire: funghi trifolati, or 'truffled' mushooms, so called because the thinly sliced and sautéed mushrooms are said to resemble that other, more highly prized tuber. I use two methods to make funghi trifolati, and both are equally easy:

Pere al vino rosso (Pears in Red Wine Sauce)

Pere al vino rosso (Pears in Red Wine Sauce) by Frank Fariello

Dessert is our house is normally a piece of fruit, perhaps with some cheese, and, in winter, some mixed nuts in their shells. This is why you will not find very many desserts featured on this blog. But there is at least one prepared dessert that makes its way on to our table in the colder months: pere al vino rosso, or pears poached…

Vegan Spaghetti and Meatballs by River Trekker

This is so fast and so simple. It's effortless. It's so delicious you won't believe how good it is until you try it. I didn't. My husband (not vegetarian) loves it! In fact he loves to cook this himself.

Zucchini Fettuccine al Pesto

Zucchini Fettuccine al Pesto by CrunchyLettuce

Who doesn’t crave pasta? I certainly do. Classic comfort food, right? But no one wants to wake up in the morning with carb face :) The solution: raw zucchini “noodles”! Don’t underestimate the simplicity of this dish. This pesto really is delicious. And the noodle texture is surprisingly similar to regular fettuccine noodles.

Insalata di arance rosse

Insalata di arance rosse by Frank Fariello

I recently found some blood oranges from California at the market--and I love blood oranges--so I made a blood orange salad as 'dessert': you just peel and slice the oranges, sprinkle over some black olives (Gaeta or nicoise are best), bits of red onion and parsley. Season with a bit (not much) of salt and pour over un filo d'olio.…

ChilItaliano

ChilItaliano by Rich H

This "Italian chili" is a bitey, spicy bit of heaven. With just the right amount of spices, wine and "heat" this hearty dish is sure to please even the most discriminating chili afficianado. It is a vegan dish but by using some earthy mushrooms the chili takes on a meaty tone that is delicious in every way!

Garlic and Oregano Roasted Tomatoes

Garlic and Oregano Roasted Tomatoes by Denise Fletcher

These plump, scarlet, glistening little bullets of flavour are wonderful bobbing about in soup, tumbling around strands of spaghetti or linguine, smooshed into a herby, dimpled foccacia, stirred into steaming risotto or rice or riddling a fat, buttercup-yellow omelette. The uses for them are legion. And, nothing could be simpler. You…

Vegan Carrot Cake Cupcake for ONE

Been a bit obsessed with single serving desserts lately. This one I think about DAILY. It is not overly sweet, and I feel almost less guilty because there are carrots in it. Score! It doesn't even need frosting.
