Corn Bread Chile Rellenos

Corn Bread Chile Rellenos by Patrick Travis

This is a cross between corn bread and chile rellenos I pulled together using a cornbread recipe that uses no baking soda or powder so its very dense. I layer whole canned green chilies between layers of cornbread batter, add some cheese, and have a very filling vegetarian main or side dish. I add pure ground chile powder to the…

Warm Brussles Sprouts Salad with Almonds and Parmesan

Warm Brussles Sprouts Salad with Almonds and Parmesan by Nancy Miyasaki

I adapted this from a Oprah recipe. She makes the salad with raw brussel sprouts. I couldn't quite trust that, so I blanched them lightly before slicing. This produced a delcious and slightly warm salad. I should have tried some raw and some cooked to see which method is best. Maybe one of you can do that and let us know?

Apple Cake made from Apple Skin and Core Pulp

Apple Cake made from Apple Skin and Core Pulp by Jeani Coleman

I teach a cooking class to teens and last week we made apple pies. I didn't want to compost all the peels, cores, seeds and stems of the 50 Granny Smith apples. I wanted to make something with them. So, I put them in my Blendtec high speed blender and pulverized them in batches with water. (This would probably only work if you have a…

Incredible Rum Punch

Incredible Rum Punch by Nancy Miyasaki

This simple recipe was a HUGE hit at our last pool party. Once the guys got a sip of it, they finished off their beers and started drinking the punch. I ended up making 3 batches. When I ran out of Coconut Rum I started using Myers. Coconut is my preference, but both were great! Super easy to make compared to other favorites of…

Chocolate Roulade

Chocolate Roulade by Ann Harris

There's really no need for a special jelly roll pan--I've been using a 10" X 15" sided cookie sheet with success. Using a bent icing knife will loosen the cake quickly and easily!

German Chocolate Cake

German Chocolate Cake by Lidy Concepcion

German Chocolate Cake is decidedly the result of good-old American ingenuity. Deep, dark chocolate cake is layered with a rich filling of toasty coconut and pecans, then glazed with a slick, bittersweet chocolate icing. It’s based on a recipe using Bakers™ Chocolate, a company which was founded by Samuel German in 1852, hence the…

Rhubarb Cream Pie with Almond Crumb Crust

Rhubarb Cream Pie with Almond Crumb Crust by Adam Janowski

When I think of spring, I think of fresh wild asparagus, daffodils and tulips, and rhubarb. I don’t know why I think of rhubarb, but I do. I know that there were two hills of rhubarb growing way in the back of the farm behind the chicken coop and the asparagus beds, to the left of the orchard that never really bore fruit. In my own…
