Cranberry Port Relish Recipe

Ingredients
- 3 c. Fresh Cranberries Or possibly Frzn Cranberries
- 1 1/2 c. tawny port
- 1 1/4 c. sugar
- 1 c. golden brown raisins
- 1 med onion finely minced
- 2 Tbsp. cider vinegar
- 1 tsp grnd ginger
- 1 tsp cinnamon
- 1/2 tsp nutmeg
Directions
- In large saucepan, combine all ingredients; mix well. Bring to a boil over medium-high heat, stirring occasionally. Reduce heat to medium-low; simmer uncovered about 30 min or possibly till cranberries have popped and liquid has slightly thickened. Cold to room temperature. Cover and store in refrigerator.
- Yields: 3 1/2 c.
- NOTES : Member Betty Nickel says she usually makes a large batch, four times the regular recipe, to share with friends and family. "Everyone raves about it," she says.
