Adding a few new veggies and seasonings, and subbing an oil-based dressing, made it lighter and brighter. The recipe makes enough for a crowd or potluck, so cut down by one third or two thirds if needed.

For me, this has just the right balance of slaw to dressing. A true creamy slaw delight. Keep in mind this produces a VERY creamy version of coleslaw. To reduce the creaminess, simply add a bit more cabbage.
