Fish with Spice Rub and Lemony Rice by Nancy MiyasakiThis is an amazingly easy and delicious recipe. The spice rub would be yummy on just about anything I think. I really liked the way the fish cooks by steaming on top of the rice. First, it makes the dish even easier, it saves energy, and it won't heat up your house as much in the summer. More importantly, the fish just melts in… |

Shrimp Creole by John SpottiswoodThis isn't all that fancy or exotic, but it's a wonderfully rich and fully flavored. If you want greater authenticity, you can substitute butter where I have used olive oil. I love butter, but try to control it for health reasons. It's delicious as I have made it, so no need to add the extra butter in my opinion. |

Southwestern Sweet Potato Casserole by John SpottiswoodI adapted this from a Stuffed Acorn Squash recipe that sounded great. My kids aren't big fans of squash...but they do love yams and sweet potatoes. I thought this was wonderful served with warm rice. I sprinkled cayenne on mine to spice it up a bit. It was even better as leftovers the next couple of days. The photo did not come… |

Ground beef and Zucchini Saute by Nancy MiyasakiI had some fresh zucchini from our garden and I needed something quick to make. I found a recipe online and adapted it to make it a bit more flavorful. This is comfort food...not appropriate for a dinner party, but definitely tasty. If you spice it up and add a dollop of yoghurt on top, it is reminiscent of yummy side dishes served… |

Chicken Artichoke Bacon Pizza by CarolinaheartstringsOne of my favorite pizzas at one of our local pizza places (dare I say it, Papa Murphy’s) is their chicken, bacon, artichoke pizza on thin crust. Heaven help me I could eat the whole thing myself. I could not wait to try and make one at home for our August pizza theme. It turned out pretty darn well if I do say so myself! |

Burrito Pie by CarolinaheartstringsThis month we are trying out our favorite “international” recipes. The Husband and I love Mexican food. I used to make a variation of this recipe all the time when we were first married. I used refried beans then and we now prefer black beans and just like my enchilada casserole recipe (check it out if you want a great enchilada… |

Double Sausage Pizza by Patti FisherKen’s friend David came over so Ken could help him fix his computer. To thank him he wanted to treat us to take out pizza. Oh no, my friend, Patti can make a sausage pizza to make shop owners cry. She uses lots of our favorite sausage and Ken’s smoked cheeses, plus Chef of the Future Floribbean Rub & Seasoning. An easy and quick pizza… |
