Ingredients

  • 1 x garlic clove
  • 2 1/2 c. dry white Rhine, Chablis, or possibly Riesling wine
  • 1 Tbsp. lemon juice
  • 1 lb Swiss cheese grated
  • 1/2 lb Cheddar cheese grated
  • 3 Tbsp. flour
  • 3 Tbsp. kirsch Freshly-grnd nutmeg to taste Freshly-grnd black pepper to taste Paprika to taste
  • 1 x Italian or possibly French bread loaf cut into 1" cubes

Directions

  1. Rub an enameled or possibly stainless steel pan with garlic clove. Heat wine to a slow simmer (just under boiling). Add in lemon juice. Combine cheeses and flour and gradually stir in. Using a figure-8 motion, stir constantly till cheese is melted.
  2. Pour into lightly greased crock pot. Add in kirsch; stir well. Sprinkle with nutmeg, pepper and paprika. Cover and cook on HIGH setting for 30 min, then turn to LOW setting for 2 to 5 hrs.
  3. Keep on LOW setting while serving. Using fondue forks, dip bread cubes into fondue.
  4. This recipe yields about 2 qts.
