  • 1 c. unsalted butter room temperature
  • 1 c. packed light-brown sugar
  • 1 c. granulated sugar
  • 2 lrg Large eggs room temperature
  • 1 tsp pure vanilla extract
  • 3 c. old-fashioned rolled oats
  • 1 c. all-purpose flour
  • 1/2 c. wheat germ
  • 1 tsp baking soda
  • 1 tsp baking pwdr
  • 1 1/2 c. mixed dry fruits and nuts see * Note

Directions

  1. * Note: Use fruits and nuts such as golden brown raisins, currants, coarsely minced dry apricots, dry cherries, coarsely minced pecans or possibly a combination.
  2. Heat oven to 350 degrees. Line baking sheets with Silpats; set aside.
  3. In the bowl of an electric mixer fitted with the paddle attachment, cream the butter, brown sugar, and granulated sugar on medium speed till light and fluffy, about 3 min. Add in the Large eggs; mix on high speed to combine.
  4. Combine the rolled oats, flour, wheat germ, baking soda, and baking pwdr in a large bowl. Stir to combine. Add in the flour mix to the butter mix, and beat on low speed to combine, 10 to 15 seconds. Remove bowl from mixer, and stir in raisins.
  5. Using a large metal scoop, drop dough onto prepared sheets, about 2 inches apart. Bake till golden brown and just set, about 18 min. Transfer sheets to wire rack to cold.
  6. This recipe yields about 3 dozen.
