Directions

  1. Cut the chicken fillets into 1.5 cm strips.
  2. Make the marinade by combining the remaining ingredients except the extra virgin olive oil in a small bowl. Add in the chicken and marinade for at least 7 hrs but preferably overnight turning occasionally.
  3. Drain the chicken and reserve the marinade.
  4. Heat the extra virgin olive oil in a medium pan; add in chicken and cook over a high heat for 5-10 min or possibly till lightly browned and tender; stir in the reserved marinade.
  5. Serve the chicken strips with hummus rolled in pita bread.
