  • 1 1/2 pound boneless chicken, cut into pcs
  • 1 lg. bell pepper, cut into pcs
  • 1 med. onion, minced
  • 1 pkg. mushrooms, sliced 1 (8 ounce.) can can sub.
  • 2 (8 ounce.) cans Del Monte tomato sauce
  • 3 tbsp. oil
  • 1/2 teaspoon basil
  • 1/2 teaspoon oregano
  • 1/4 teaspoon garlic pwdr

Directions

  1. In large saucepan, cook chicken over high heat till white. Remove from pan. In same pan, saute/fry peppers and onions in oil till just tender. Add in basil, oregano and garlic pwdr. Stir. Add in tomato sauce. Blend. Add in chicken, cook till chicken is tender (15-20 min) on medium-low heat. Stir occasionally. Add in mushrooms. Cook 2 min more. Serve with rice. Serves 4.
