Directions

  1. Cut chicken into quarters.
  2. Fry with onion and garlic in extra virgin olive oil until brown.
  3. Add in tomatoes and water. Boil 5 min.
  4. Add in bay leaf, saffron, salt, rice and diced pepper. Stir thoroughly. Place in a large casserole and bake in 350 degree oven 20 min. Garnish with peas and pimentos.
