Chicken Zucchini Empanadas by Kristy BrazeltonI have zucchini from friends & family that needs to be used. I have also been craving Mexican food. So, I decided to incorporate the two for dinner. The chilis are very mild & have a smokey sweet flavor. Think a mildly smokey-spicy raisin. My kids ate this dish without one comment of it being too spicy. |

Lightened up mac n' cheese by Kristy BrazeltonThis recipe is from the Sept. 2011 Cooking Light magazine and is the best light recipe I have ever tasted. I use rice flour macaroni in an effort to cut down on glutens. My kids and husband, both of whom refuse to eat squash go for seconds of this. It makes a lot so be prepared for left overs. |
