Roasted Tomatillo Salsa by Cindy McNamaraI picked up a bunch of nice looking tomatillos at the local farmers market this week that were crying to be charred on the grill and made into a spicy salsa for me to can. It could be eaten fresh and would last a couple of weeks in the fridge. If you don't want so much heat, simply reduce the jalapeno quantity. |

McNamara's Brown Irish Soda Bread by Cindy McNamaraThis is a healthy brown version with no fruit or caraway seeds added. I have taken the liberty to include ground flaxseed and substitute honey or agave nectar for the sugar. I think this is my favorite version of this traditional St. Patrick's Day staple. |

Farmhouse Bean Soup by Cindy McNamaraTo me, navy bean soup is a requirement once the weather cools off. This is a meatless version that includes dice potatoes and crisp green beans added at the very end of cooking.A hambone or a smoked turkey wing would be yummy! |

Braised Lamb w Flageolets & Winter Vegetables by Cindy McNamaraBoneless leg of lamb butterflied and packed with a garlic herb paste then braised. Winter root vegetables and heirloom beans added towards the end of a 3-4 hour braise. Comfort food with a Provencal flavor. I'm serving it up tonight with lightly dressed green salad, crusty bread and red wine. |

McNamara Clans Favorite Chili by Cindy McNamaraJust whipped up a batch of this rich, beefy chili for Super Bowl Sunday. We love to top it with sour cream, avocado, cilantro, shredded cheese, green onion and fried corn tortilla strips. I like a squeeze of lime on mine too. Its always better the second day and makes excellent filling for baked potatoes, burritos or for nachos. |

Sausage, White Bean & Kale Soup by Cindy McNamaraI prefer to use a spicy italian sausage for this soup but other sausages can certainly be used as you prefer. This soup can be further enriched at the end by adding some milk or cream but it isn't necessary. Reheats really well for next day servings. Serve up with a crusty loaf of bread and its a hearty meal all on its own. Don't… |
