Fish Tacos with Diablo SauceI prefer my fish tacos with sauteed not deep fried fish. The key for this recipe is the sauce, which can be as hot or mild as you prefer. I'd rate this particular version as a 5 out of 10 on the heat scale. Sometimes I like to add a bit of chopped mango and jicama to my Pico to use as a salsa for fish or chicken dishes. |

Roasted Tomatillo SalsaI picked up a bunch of nice looking tomatillos at the local farmers market this week that were crying to be charred on the grill and made into a spicy salsa for me to can. It could be eaten fresh and would last a couple of weeks in the fridge. If you don't want so much heat, simply reduce the jalapeno quantity. |

Braised Lamb w Flageolets & Winter VegetablesBoneless leg of lamb butterflied and packed with a garlic herb paste then braised. Winter root vegetables and heirloom beans added towards the end of a 3-4 hour braise. Comfort food with a Provencal flavor. Crazy GumboI may have gotten carried away by including chicken, shrimp and fish along with the ham and sausage but....it KICKS! The flavor is best after spending the night in the refrigerator if you can wait that long. Serve it up over steaming hot rice and pour a cold beer! |
