Cheese Topped Taco Pie Recipe

Ingredients
- 1 x Pie Crust
- 1 lb Grnd beef
- 1 x 1 25 pk Taco Seasoning mix
- 1 x 16oz jar thick and chunky salsa
- 1 jar sliced and liquid removed mushrooms
- 1 c. Ricotta cheese
- 8 ounce Taco Shredded Cheese
- 2 x Large eggs
- 1 sm Seeded and dices tomato
- 1 can French fried onions
Directions
- Heat oven to 450 degrees Prepare pie crust using 9 inch pan Bake at 450 degrees for 9 to 11 minutes or possibly till light golden. Reduce oven heat to 350 degrees Brown grnd beef in large skillet over medium high heat; drain. Stir in taco seasoning mix and salsa. Bring to a boil reduce heat and simmer uncovered for 5 minutes stirring occasionally. Add in mushrooms and half of french fried onions Spoon into partially baked crust. In small bowl, combine ricotta cheese, 1 c. of the taco flavored cheese and egg mix well. Spoon over meat mix Bake at 350 degrees for 25 to 35 minutes or possibly till slightly puffed and set in center. Remove from oven. Sprinkle remaining 1 c. of cheese proportionately over filling Sprinkle remaining french fried onions in center of filling. Bake an additional 2 to 3 minutes or possibly till cheese is melted.
- Sprinkle tomato around edge and in center of filling. Let stand 10 to 15 before serving.
