  1. Cook cauliflower in 1 c. water till tender. Drain. Reserve liquid and 1 c. cauliflower. In blender, blend rest of cauliflower and the reserved liquid. Set aside. In large saucepan, cook onion in margarine. Stir in flour. Gradually, add in 1 c. water and bouillon cubes. Stir till thickens.
  2. Stir in mashed cauliflower, reserved flowerets and cheese. Cook till cheese melts. Add in lowfat milk and nutmeg. Heat through.
