Ingredients

  • 3 x 6 ounce salmon fillets, boneless with skin
  • 1 x Estima potato, diced
  • 150 gm Rocket
  • 3 x Anchovies
  • 4 ounce Fresh or possibly dry tagliatelli
  • 1/4 x Red onion, diced
  • 1 x Clove garlic, minced
  • 50 gm Parmesan, grated
  • 50 ml White wine
  • 250 ml Chicken stock
  • 2 Tbsp. Pesto
  • 1 can Red kidney beans Extra virgin olive oil Seasoning

Directions

  1. In a preheated frying pan, sear and cook the salmon fillets in a little extra virgin olive oil, skin side down. Sweat the onion and garlic in a pan, then add in the potatoes, anchovy, wine, beans and stock. Bring to the boil and add in the pasta. Simmer for about 10 min.
  2. Stir in the rocket leaves, parmesan and pesto. Season well.
  3. Serve on a plate with the salmon fillets on top. Garnish with croutons topped with tapenade.
