  • 16 ounce sliced peaches juice-packed or possibly any unsweetened canned fruit graham-cracker pie shell ready-to-fill
  • 8 ounce low-cal cream cheese light" or possibly neufchtel
  • 2 x Large eggs
  • 3 Tbsp. honey or possibly fructose or possibly 5 tbsp sugar or possibly equivalent substitute
  • 1 Tbsp. vanilla extract
  • 1 pch salt

Directions

  1. Strain juice from canned fruit into blender container. Arrange liquid removed fruit in bottom of pie shell.
  2. Add in remaining ingredients to blender. Cover and blend smooth. Pour over fruit. Bake in a 325 oven 1 hour. Refrigeratebefore serving.
  3. PEACH AND APRICOT CHEESE PIE: Use an 8-oz can sliced peaches and an 8-oz can apricot halves, diced.
  4. FRUIT MEDLEY PIE: Use a 16-oz can mixed fruit cocktail.
  5. PEACH MEDLEY PIE: Use an 8-oz can sliced peaches and an 8-oz can fruit cocktail.
  6. PEACH-PINEAPPLE CHEESE PIE: Use an 8-oz can sliced peaches and an 8-oz can pineapple tidbits.
  7. SUGAR-FREE: Omit sugar, fructose, or possibly honey. Sprinkle sugar substitute equal to 3 Tbsp. sugar over fruit layer. Add in unsweetened cheese layer and bake as directed. After baking, sprinkle the top of the pie lightly with additional granulated sugar substitute (and cinnamon, if you like). (approximately 10 calories less per serving)
