  • 1 flower fresh broccoli, cut into florets.
  • 1 1/2 cup.boneless chicken tenders,
  • 4 tbsp milk
  • 3/4 cup. shredded Cheddar cheese
  • 2 tbsp. butter, melted
  • salt to taste
  • green and red peppers,2 tbsp each,slit into small pieces
  • 2 tbsp + 1 tsp Southwest Spice mix
  • 2 tbsp. dry bread crumbs
  • 1 tbsp finely chopped parsley or cilantro

Directions

  1. Grease a large Microwave bowl with butter or oil and then arrange vegetables and chicken.
  2. Season well with the spice mix,sprinkling it all over and mix well so that it coats the vegges and the chicken tenders uniformly.Adjust the measurement of the spice mix according to your taste.
  3. pour over milk,sprinkle with cheese.
  4. Combine butter and bread crumbs; sprinkle over cheese.
  5. cover with waxed paper or plastic wrap,make small holes for the steam to escape; microwave on high 7 minutes or until hot, rotating dish halfway through heating.
  6. After it is done,sprinkle chopped parsley or cilantro over the dish and serve hot with bread rolls and some salad.
