%3C/p%3E%3Cp%3EI've%20posted%20many%20recipes%20for%20beans,%20because%20they%20are%20one%20of%20my%20favorite%20legumes%20that%20is%20good%20anytime%20of%3C/p%3E%3Cp%3Ethe%20pork.%3C/p%3E%3Cp%3ENOTE:%20It%20isn't%20mandatory%20to%20have%20a%20bean%20pot.%20My%20favorite%20method%20of%20cooking%20beans%20is%20in%20a%20Dutch%20oven,%20simmering%20them%20on%20a%20stove.%20My%20pressure%20cooker%20is%20another%20great%20way%20to%20make%20beans,%20in%20a%20fraction%20of%20the%20time.%20%20I've%20never%20cooked%20beans%20in%20the%20oven,%20over%20a%20period%20of%20six%20hours!%20I've%20read%20that%20this%20technique%20produces%20beans%20with%20a%20lot%20of%20flavor.%20It%20was%20time%20to%20test%20this%20method.%20%20ONE%20MORE%20NOTE:%20I%20do%20not%20recommend%20making%20these%20in%20a%20slower%20cooker,%20though.%20Maybe%20I'm%20wrong,%20but%20I've%20never%20had%20luck%20making%20really%20good%20beans%20in%20a%20slow%20cooker.%3C/p%3E%3Cp%3EWe%20begin%20with%20one%20sliced%20onion,%20as%20the%20bottom%20layer.%20%20Martha%20uses%20canned%20plum%20tomatoes.%20She%20mentions%20(with%20a%20slight%20hint%20of%20disdain,%20%22one%20could%20use%20ketchup%22.)%20However,%20I%20had%20some%20fresh%20Roma%20tomatoes,%20that%20needed%20to%20be%20used...or%20they%20wouldn't%20be%20quite%20so%20fresh%20any%20longer.%20I%20think%20Martha%20would%20approve.%3C/p%3E%3Cp%3EWhy%20not?%20So,%20they%20go%20in%20next.%20%20For%20aromatics,%20we%20add%20some%20bay%20leaves%20and%20whole%20cloves.%3C/p%3E%3Cp%3EIn%20goes%20brown%20sugar,%20a%20little%20dry%20mustard,%20salt%20&%20pepper%20and--%20wonderful%20sticky%20molasses.%3C/p%3E%3Cp%3EWell,%20of%20course,%20we%20need%20beans!%20%20They%20should%20be%20soaked%20the%20night%20before,%20of%20course.%20I%20could%20have%20sworn%20that%20I%20had%20navy%20beans.%20Nope.%20I%20had%20Great%20Northern%20White%20Beans.%20%20A%20quick%20internet%20search%20gave%20me%20the%20confidence%20that%20these%20would%20work--though,%20navy%20beans%20are%20the%20most%20traditional.%20%20Next%20time,%20k?%3C/p%3E%3Cp%3EWow,%20this%20pot%20is%20getting%20pretty%20full!%3C/p%3E%3Cp%3EI%20had%20to,%20gently,%20smush%20down%20the%20ingredients%20to%20make%20room%20for%20the%20salt%20pork%20and%204%20cups%20of%20water%20(the%20recipe%20said%20five,%20but%20there%20wasn't%20enough%20room%20left).%20%20I%20put%20the%20lid%20on,%20and%20decided%20to%20place%20the%20pot%20on%20a%20baking%20sheet%20and%20put%20it%20in%20the%20oven%20at%20300F.%20%20Six%20hours%20is%20what%20Martha%20recommended%20to%20allow%20the%20beans%20to%20bake.%20%20She%20also%20said%20to%20keep%20an%20eye%20on%20the%20water,%20and%20add%20more%20if%20needed%20and%20that%20there%20is%20no%20need%20to%20stir.%20Got%20it!%3C/p%3E%3Cp%3EIt's%20a%20good%20thing%20I%20put%20the%20bean%20pot%20on%20a%20baking%20sheet,%20because%20the%3C/p%3E%3Cp%3Eliquid%20oozed%20out%20from%20the%20top!%20%20Eventually,%20the%20water%20began%20to%20become%20absorbed...and%20five%20hours%20later...%3C/p%3E%3Cp%3E...the%20house%20was%20filled%20with%20the%20aroma%20of%20molasses%20and%20pork.%20%20I%20was%20anxious%20to%20taste%20them!%20%20I%20thought,%20to%20myself,%20that%20I%20wanted%20the%20beans%20to%20be%20in%20a%20thicker%20sauce.%20So,%20I%20removed%20the%20lid%20and%20put%20them%20back%20in%20the%20oven%20for%20another%20hour.%3C/p%3E%3Cp%3ENow,%20that's%20what%20we're%20talkin'%20about!%3C/p%3E%3Cp%3EThese%20were%20cooked%20perfectly,%20and%20I%20was%20happy%20with%20the%20thickness%20of%20the%20sauce--%20not%20too%20watery,%20but%20not%20like%20wallpaper%20paste.%20Let's%20eat!%3C/p%3E%3Cp%3ETASTING%20NOTES:%20%20Being%20a%20Californian,%20I%20know%20these%20as%20%22Pork%20and%20Beans%22.%20Since%20I%20did%20use%20an%20authentic%20Boston%20Bean%20Pot,%20I'll%20call%20them%20Boston%20Baked%20Beans.%20First,%20how%20did%20they%20taste?%3C/p%3E%3Cp%3EThe%20beans%20were%20tender,%20but%20not%20the%20least%20bit%20mushy.%20%20Big%20plus.%20%20The%20overall%20bean%20dish%20was%20crazy%20good--%20specifically,%20I%20felt%20that%20the%20balance%20of%20molasses%20was%20spot%20on.%20%20I%20could%20taste%20the%20cloves,%20and%20was%20pleasantly%20surprised%20at%20how%20much%20these%20added%20to%20the%20overall%20flavor.%20(Though,%20I%20think%20I'd%20cut%20them%20back%20about%2025%25%20as%20they%20almost%20dominated%20the%20flavor.)%20The%20brown%20sugar%20gave%20a%20delicious%20sweetness--%20but%20noticeably%20less%20sweet%20than%20the%20supermarket%20canned%20brands%20(I%20shall%20not%20name).%20%20My%20husband%20liked%20that%20these%20weren't%20overly%20sweet.%20%20Myself?%20I%20would%20be%20tempted%20to%20kick%20up%20the%20brown%20sugar%20by%20an%20extra%201/4%20cup.%20Then%20again,%20I%20admit%20that%20have%20a%20sweet%20tooth--%20so%20adjust%20to%20you%20own%20personal%20liking.%3C/p%3E%3Cp%3EThe%20little%20bits%20of%20salt%20pork%20were%20tender,%20and%20gave%20a%20nice%20balance%20of%20saltiness.%20The%20fresh%20tomatoes%20worked%20out%20well,%20but%20I%20would%20think%20ketchup%20would%20work,%20too.%20%20I%20liked%20the%20color%20and%20texture%20of%20the%20tomatoes,%20so%20I'll%20stick%20to%20that%20ingredient.%20%20Funny,%20but%20the%20onions%20literally%20disintegrated%20and%20melted%20into%20the%20beans!%20I%20couldn't%20see%20them%20at%20all.%3C/p%3E%3Cp%3EI%20can%20see%20why%20people%20swear%20that%20baking%20beans,%20in%20a%20ceramic%20pot,%20is%20one%20of%20the%20best%20techniques.%20%20The%20texture%20of%20the%20beans%20was%20absolutely%20perfect--%20having%20baked%20for%20six%20hours,%20they%20weren't%20mushy%20nor%20falling%20apart.%3C/p%3E%3Cp%3EIt%20was%20raining%20cats%20and%20dogs,%20when%20I%20made%20the%20beans.%20Oh,%20and%20what%20did%20I%20serve%20with%20the%20Boston%20Baked%20beans?%20%20At%20first,%20I%20considered%20sausage.%20Then%20maybe%20chicken.%20%20Then%20it%20hit%20me--%20Pork%20Baby%20Ribs,%20of%20course!%20%20I%20made%20these%20in%20my%20beloved%20pressure%20cooker--%2015%20minutes%20of%20cooking,%20with%20a%20tasty%20homemade%20BBQ%20sauce,%20then%20broiled%20until%20glazed.%20%20Who%20says%20it%20has%20to%20be%20summer%20to%20enjoy%20barbeque?%20%20That%20recipe%20can%20be%20found%20here.%3C/p%3E%3Cp%3EI%20can%20see%20myself%20making%20these%20beans%20year-round,%20and%20definitely%20when%20we%20do%20our%20summer%20barbeque%20entertaining.%20%20This%20makes%20a%20LOT%20of%20beans,%20and%20is%20very%20cost-effective,%20too.%20%20Of%20course,%20that%20doesn't%20include%20the%20cost%20of%20a%20bean%20pot--%20which%20I%20think%20would%20be%20a%20great%20addiction%20to%20anyone's%20kitchen%20storage%20cabinet%20(mine%20is%20jammed%20full,%20already).%20%20Otherwise,%20just%20use%20an%20oven-proof%20pot%20with%20a%20lid%20(or%20a%20Dutch%20oven).%3C/p%3E){kind=link}
