Balsamic Marinated White Beans Recipe

Ingredients
- 2 c. cooked dry white beans
- 1/4 c. extra-virgin extra virgin olive oil
- 3 Tbsp. balsamic vinegar
- 1 Tbsp. chopped shallots
- 1 tsp chopped garlic
- 1 Tbsp. finely-minced parsley leaves Salt to taste Freshly-grnd black pepper to taste
Directions
- In a mixing bowl combine all the ingredients together. Mix well. Season with salt and pepper. Cover and let stand for at least 1 hour.
