Italian White Bean And Artichoke Salad Recipe

Ingredients
- 2 1/2 Tbsp. red wine vinegar
- 2 Tbsp. extra virgin olive oil
- 1 tsp tomato paste
- 1/4 tsp salt
- 1/8 tsp black pepper
- 1 x garlic clove chopped
- 6 c. thinly sliced spinach about 5 c.
- 2 c. green bell pepper strips
- 3/4 c. diced sharp Provolone cheese (3-ounces)
- 1/2 c. diagonally sliced celery
- 1/2 c. vertically sliced red onion
- 2 Tbsp. minced fresh basil
- 1 Tbsp. minced fresh parsley
- 19 ounce canned cannellini beans or possibly other white beans liquid removed
- 14 ounce canned artichoke hearts liquid removed and quartered
Directions
- FOR THE VINAIGRETTE: Combine ingredients in a small bowl; stir with a whisk.
- FOR THE SALAD: Combine spinach and remaining ingredients. Drizzle with vinaigrette, and toss gently. 4 servings.
- NOTES : Try to handle this salad as gently as possible so the canned beans will hold their shape.
