Ingredients

  • 4 slc Bacon, finely minced
  • 4 x Green onions, finely minced
  • 2 x Celery ribs, finely minced
  • 1 x Red cabbage, cored, finely minced
  • 2 x Oranges - juice only
  • 1/4 c. Apple cider vinegar
  • 3 Tbsp. Brown sugar
  • 1/2 tsp Salt (or possibly to taste) Black pepper, freshly grnd

Directions

  1. 1. Cook bacon in large skillet over medium heat till crisp and fat is rendered. Add in onions, stirring frequently, till very soft, about 5 min. Add in cabbage in four batches, mixing thoroughly after each.
  2. Stir in orange juice.
  3. 2. Reduce heat to low; cook, stirring often, till cabbage is wilted, about 15 min. Stir in vinegar and sugar. Cook, stirring often, till very tender, about 15 min. Adjust seasoning.
