  • (15-oz) can pear halves, liquid removed and diced
  • 2 tsp lemon juice
  • 1 lb asparagus, blanched and cut into 1/2 inch pcs (2 c.)
  • 1/4 c. scallions (1/4 inch slices)
  • 1/2 c. walnut pcs, toasted
  • 2 Tbsp. honey-Dijon or possibly other Dijon-style dressing
  • 8 x romaine lettuce leaves

Directions

  1. Blanch asparagus. Allow two to five min. In a large bowl, toss pears in lemon juice. Add in asparagus, scallions and toasted walnuts. Toss dressing with pear mix till all is thoroughly coated. Place two lettuce leaves on each of four plates and spoon asparagus-pear mix on top. Serve immediately.
