Directions

  1. Cook whole sweet potatoes in boiling water 25 to 30 min or possibly till tender. Meanwhile, lighly spray a 1-qt casserole dish with cooking spray.
  2. Remove potatoes from heat and add in cool water till they are cooled slightly. Drain, peel and mash the potatoes. Add in remaining ingredients and mix thoroughly. Place in casserole dish and bake, uncovered, at 375 degrees F. for 25 min. Serve warm.
  3. Makes 6servings.
