Taco PizzaWhat to do with leftover Taco meat.... we do lots of stuff with leftovers after Taco Night. We made salads, omelets, breakfast burritos and Taco Pizza. Kids love it and its quick and easy because you have all your left overs on hand. |

Mexican Style Beef Stew (Crockpot)This is a nice spicy change from your everyday beef stew. You can spice it up more if you like. My son loves to eat it with tortilla chips and some cornbread. You can garnish it w a dollop of sour cream on top and/or shredded cheddar cheese and fresh chopped cilantro. |

Bacon Crusted Texas BrisketPull out the smoker for this one or be prepared to use your grill. I recommend charcoal over gas. This is time consuming but worth it. I found this recipe in Steven Raichlen's Cookbook; "How to Grill by Steven Raichlen (Workman, 2001)." |
