Thai BBQ Peanut Chicken

Thai BBQ Peanut Chicken by Nancy Miyasaki

Although we're working with chicken thighs in this recipe, the marinade and the sauce are exceptional on pork and even lamb. The peanut sauce will keep for several days in the refrigerator. For a really funky side dish later on in the week, toss the sauce with Chinese noodles and a few minced scallions for a cold noodle salad. Serve…

Sauteed Zucchini and Mushrooms

Sauteed Zucchini and Mushrooms by Nancy Miyasaki

This is a simple and fresh tasting dish that I created myself. I don't do that very often, but I must admit this was a success. I might try adding red onion and experiment with different spices, but honestly this is simple and delicious as is.

Broccoli and Mushroom Quiche

Broccoli and Mushroom Quiche by Nancy Miyasaki

I made this quiche for father's day and it was adored by the adults, not so much by the kids. The garlic ads a nice dimension and a little kick. I loved it, and will definitely make again. Note: Quiche can be baked 1 day ahead and chilled. Reheat, uncovered, in a 325°F oven, about 25 minutes.

Grilled Garlic Fish

Grilled Garlic Fish by Nancy Miyasaki

This is a wonderful and simple marinade for fish that is awesome on the BBQ. It also works well for shrimp, so you can try both in one meal and see which you prefer. I prefer it on fish, but both are tasty. We normally serve this over rice, but it also goes well over a Parmesan and butter, or olive oil pasta.
