Slow cooker pork stew - chile verde

Slow cooker pork stew - chile verde by Nancy Miyasaki

This is an easy and tasty version of chile verde that I adapted from a slow cooker cookbook. This keeps very well for 3-4 days, and honestly tastes as good if not better reheated. You can also serve it inside tortillas as a taco or burrito for a second meal. Enjoy!

Easy Cinnamon Apple Strudel

Easy Cinnamon Apple Strudel by Nancy Miyasaki

This is super simple and truly delicious. I made it for John's birthday dinner, since he loves cinnamon apple desserts with vanilla ice cream. It's light and flavorful without being too rich. We finished it all in one night between the six of us. Mmm!

Pasta with Tomato and Roasted Eggplant

Pasta with Tomato and Roasted Eggplant by Nancy Miyasaki

A adapted this from a recipe in Alice Waters' Chez Panisse Vegetables cookbook. My other eggplant pasta dishes all call for fried eggplant, which is delicious but messy and time consuming. So I was eager to try a roasted version. I slightly prefer the flavor of the traditional, fried eggplant, but given the reduction in effort I…

Buttermilk Banana Bread

Buttermilk Banana Bread by Nancy Miyasaki

I've made dozens of different types of banana bread, and this is one of my favorites. Our kids devoured it! My oldest told me "this is the best banana bread you've ever made, Mom." That's high praise from a 9th grader!

Asian Crusted Salmon

Asian Crusted Salmon by Nancy Miyasaki

I'm always looking for interesting new ways to cook salmon that my kids will love. This crusted, blackened salmon was a great addition to my recipe box. I kept it relatively mild, but it could easily be spiced up by adding some cayenne pepper. I thought the indian spices complimented the flavor of the salmon wonderfully. I served…

Ground beef and Zucchini Saute

Ground beef and Zucchini Saute by Nancy Miyasaki

I had some fresh zucchini from our garden and I needed something quick to make. I found a recipe online and adapted it to make it a bit more flavorful. This is comfort food...not appropriate for a dinner party, but definitely tasty. If you spice it up and add a dollop of yoghurt on top, it is reminiscent of yummy side dishes served…

Homemade Swedish Pancakes

Homemade Swedish Pancakes by Nancy Miyasaki

I love swedish pancakes and have made them for a few years from a mix I bought at Trader Joes. I was out of the mix a few weeks ago, so I tried making them from scratch. It turned out to be incredibly simple and the kids love these as much if not more as the pre-packaged mix. It's also quite a bit cheaper and means one less box I…

Pasta with Cauliflower, Prosciutto, and Parmesan

Pasta with Cauliflower, Prosciutto, and Parmesan by Nancy Miyasaki

Our whole family enjoyed this flavorful pasta that I cooked tonight. Despite the chicken broth, this is a relatively dry pasta, but it is very flavorful. We added the crushed red peppers at the end because some of our kids can't take the heat, but I thought they added an important dimension. If your rushed for time, you can skip…

Chocolate Souffle

Chocolate Souffle by Nancy Miyasaki

After having a yummy souffle on a cruise recently, I came back and started making them myself. This is the best I've found so far. A simple, delicious chocolate souffle. This is a dessert that everyone in your family is sure to enjoy. Try serving it with vanilla or coffee ice cream, or with whipped cream.
